As with most of my recipes, I'm not sure exactly where they came from originally.(my mom, my grandmother or even my great -grandmother.) I have been enjoying this particular treat since I was a little girl. For all I know it could have been attached to a cool whip bucket in the 1950's. Did they have cool whip back then? It's so light, cool and refreshing and is definitely one of those desserts that I like to say, "gets the taste out." That's my code for I need a dessert after that meal.
This is so fast and easy. The only difficult part is making sure that you have all of the ingredients on hand. Here's what you'll need:
2 chocolate pie shells
1 small can (OR 1/2 large can) of lime aid
12 oz. cool whip
4 oz. sour cream
1 can eagle brand
green food coloring
mint Milanos (optional garnish) :)
Basically all you need to do is mix all of the ingredients together, but a couple of hints will help. Soften the cool whip or you will be trying to get the lumps out for an hour. (A whisk might help if you're impatient and you want your pie ASAP. If you run out of green food coloring just mix blue and yellow together. I have to do this often. You will probably buy an 8 oz. sour cream so don't forget to just use half of it. I always want to put in the entire thing because you do with everything else.

I'm going to garnish this one with Mint Milanos. Who doesn't like a cookie garnish? Now you have a pie for yourself and one to share. :) If you are attending an Easter brunch this would be a nice light dessert to bring along as well.
